Grilled Chicken Salad
Ingredients:
- 1 lb boneless
- skinless chicken breasts 1 tablespoon olive oil Salt and pepper to taste 1 teaspoon paprika 6 cups mixed salad greens 1 cup cherry tomatoes
- halved 1 cucumber
- sliced 1/2 red onion
- thinly sliced 1/4 cup feta cheese
- crumbled Balsamic vinaigrette dressing
Preparation Steps:
- 1. Preheat the grill to medium-high heat.
- 2. Rub the chicken breasts with olive oil, salt, pepper, and paprika.
- 3. Grill the chicken for 6-8 minutes per side or until cooked through.
- 4. Remove the chicken from the grill and let it rest for a few minutes before slicing.
- 5. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and sliced grilled chicken.
- 6. Sprinkle feta cheese over the salad.
- 7. Drizzle balsamic vinaigrette dressing over the salad and toss gently to combine.
- 8. Use tongs to serve the salad into individual plates.
