Grilled Chicken Salad

Ingredients:

  • 1 lb boneless
  • skinless chicken breasts 1 tablespoon olive oil Salt and pepper to taste 1 teaspoon paprika 6 cups mixed salad greens 1 cup cherry tomatoes
  • halved 1 cucumber
  • sliced 1/2 red onion
  • thinly sliced 1/4 cup feta cheese
  • crumbled Balsamic vinaigrette dressing

Preparation Steps:

  • 1. Preheat the grill to medium-high heat.
  • 2. Rub the chicken breasts with olive oil, salt, pepper, and paprika.
  • 3. Grill the chicken for 6-8 minutes per side or until cooked through.
  • 4. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  • 5. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and sliced grilled chicken.
  • 6. Sprinkle feta cheese over the salad.
  • 7. Drizzle balsamic vinaigrette dressing over the salad and toss gently to combine.
  • 8. Use tongs to serve the salad into individual plates.
